Creamy Coconut Cups

These little delicious low sugar snacks are a recipe by Liv Kaplan.

Ingredients:

  • 20g cacao butter

  • 1/3 cup cashew butter

  • 1/4 cup desiccated coconut

  • 10-12 drops of liquid stevia

  • 1/4 tsp vanilla paste or 1/8 tsp of vanilla powder

  • 1 block of dark chocolate (70% or darker)

Method:

  1. Melt cacao butter either over the stove top or microwave.

  2. Add the rest of the ingredients (except the chocolate) and combine. Then spoon evenly into a silicon muffin tray and put in the freezer to set.

  3. Once set, melt the dark chocolate and spoon evenly over the prepared cups and sprinkle some coconut on top to decorate. You can see in this picture I was a bit too keen and I didn’t let the cups completely set before pouring the chocolate, so don’t do that.
